JOB SUMMARY:

Qualified candidate for the Steward Lead (Dishwasher Lead / Utility Worker Lead) Directly supervises and coordinates activities for utility workers (Dishwashers) engaged in the overall maintenance of the kitchen by performing the following duties either personally or through subordinates.

ESSENTIAL DUTIES & RESPONSIBILITIES:

  • Assist in training and makes recommendations for discipline and/or appraisals for his /her staff.
  • Supervises the inventory of china, silver, glasses and paper supplies, and cleaning material for Food & Beverage.
  • Maintains and monitors all kitchens operating equipment such as slicers, mixers, grinders, cutters, steamers, broiler ovens, griddles, deep fryers and braziers to ensure they care clean and fully operational.
  • Promptly reports all damages to Engineering by sending out a work order.
  • Establishes a routine for cleaning walls, shelves, sinks, drains, and walk-ins.
  • Stocks up supplies, such as food or utensils in serving stations, cupboards, refrigerators or salad bars.
  • Makes sure that floors are swept and scrubbed, cleans garbage cans with water or steam.
  • As needed, may be required to wash dishes, glassware, flatware, pots, or pans, using dishwashers or by hand.
  • Provides Banquets with equipment and assists the Chef and Supervisors during banquet functions.
  • Complies with all health Department regulations and ensures that all cleaning schedules are maintained.
  • Represents The Bicycle Hotel and Casino well in all contacts. Works as team member and maintains cultural sensitivity at all times.
  • Must be available to work any shift including weekends and holidays and overtime when necessary.
  • Other job-related duties as assigned.

WORKING CONDITIONS & PHYSICAL REQUIREMENTS:

Qualified individuals must be able to regularly required to stand, walk, use hands, to finger, handle, or feel; reach with hands and arms; and talk or hear; frequently required to taste or smell; occasionally require to stoop, kneel, crouch, or crawl; regularly lift and/or move up to 25lbs and/or up to 50lbs and occasionally up to 100lbs. Noise level in the work environment is usually loud. Must be able to work in a fast-paced environment with numerous distractions.

EDUCATION/EXPERIENCE:

High School or GED diploma preferred, plus one to three years related experience and/or training/or equivalent combination of education. Experience in high volume restaurant preferred. Must have active California Food Handlers Certificate.
